Kale & Zucchini Chips

Kale_zucc_headerTwo of my ABSOLUTE favorite late-night snacks are Kale and Zucchini Chips! Denny and I have been so obsessed for the longest time. And, you may think we are weird and we probably are, but I would pick these over popcorn or potato chips any day! They are also great for a Daniel Fast, too! I absolutely love how I feel when I have been eating healthy. And, with so many yummy options out there, it’s really not that difficult! If you’re not already “in the know” on the yumminess of kale and zucchini chips, you’ve gotta check out this recipe. You will THANK ME 😉

kaleIngredients:
Kale
Olive Oil
Salt
Pepper
Garlic Powder
Onion Powder
(Or any seasoning you prefer! As Louisianians, we often just use Tony Chacherie’s)

Directions:
Fill a baking sheet with kale
Sprinkle olive oil over
Add seasonings to taste (Careful not to over-season. I accidentally do this about 80% of the time!)
Mix it all together. (I either just use my hands OR I dump it all into a large ziplock bag and mix it that way before dumping it onto the cookie sheet.)
Bake at 400 for 10 minutes
Take out, stir, and bake for another 3-5 minutes, or until crispy.

Zucc copyIngredients:
3-4 Zucchinis
Olive Oil
Same seasonings as Kale Chips recipe

Directions:
Thinly slice zucchini (the thinner the better!)
Toss in oil and seasonings to taste (Like the Kale Chips, I like to mix it all together in a large ziplock bag)
Lay out individually on a cookie sheet
Bake at 400 for 10 minutes
Take out, and flip over each one (a little tedious, I know)
Bake for another 10 minutes
Check for crispiness. If they aren’t quite crispy enough, I usually broil for 3 minutes
These don’t get 100% crispy, but I promise you, you won’t be complaining! 😉
